Instead of gluten intolerance, wouldn't it also be plausible to suggest that phytic acid, which interferes with zinc absoprtion, might cause some depressive and anxious symptomatology? Or that the absorption of tryptophan is negatively affected by other amino acids? If so, there might be other ways around "intolerance" such as destroying phytic acid prior to cooking and taking 5-HT. Just thinking....
