I finally got around to cooking it.
Even my son, who does not care much for spinach, liked it. :)
Although I think he ate around the spinach.

Spinach? Shrimp? That sounds good. Come on! Don't tease! What's the rest of it?

I'm delighted to pass it on, with Bobby's permission. He really is a great cook, and was always making me salivate in chat by describing what he was cooking. I hope he corrects me if I forget something.
You wash and devein about 2 pounds of shrimp. Put 2-3 cloves of fresh garlic and one onion in the food processor and chop. Add 1 cup of tomatoes, a teaspoon of thyme, and a teaspoon of sesame oil. Add everything to a large frying pan with four tablespoons butter, and cover with coconut milk. (I added the shrimp first and made sure they were slightly pink on each side.) Add a bag of spinach to cover and cook on low heat for 10-15 minutes. Serve over rice. Squeeze some lemon juice on it if you like.

I used to like shrimp in hot cocktail sauce with horseradish. Phillipa
