I'm delighted to pass it on, with Bobby's permission. He really is a great cook, and was always making me salivate in chat by describing what he was cooking. I hope he corrects me if I forget something.
You wash and devein about 2 pounds of shrimp. Put 2-3 cloves of fresh garlic and one onion in the food processor and chop. Add 1 cup of tomatoes, a teaspoon of thyme, and a teaspoon of sesame oil. Add everything to a large frying pan with four tablespoons butter, and cover with coconut milk. (I added the shrimp first and made sure they were slightly pink on each side.) Add a bag of spinach to cover and cook on low heat for 10-15 minutes. Serve over rice. Squeeze some lemon juice on it if you like.
