I basically use the same combination of vegetables every day but I found that alternating between tomatoes and no tomatoes can make it taste totally different. The same with adding or leaving out something sweet like carrots. Or add or leave out coconut milk or a piece of frozen chicken Then I just rotate a few spices - currently garam masala, chili powder, curry, and maybe hot pepper and ginger and end up with tastes different enough that I can eat the same basic dish for months.
