Paprika can go well with fish or eggs ... though unless you get really good quality it's pretty much tasteless. Though it does add a nice red colour.

Thyme can go well with meats like beef. It can also go well with chicken and mushrooms which are pretty much tasteless by themselves.

Parsley is good with anything tomatoe. The dried stuff is pretty tasteless but the fresh stuff is also good to add to your garlic butter or to accompany osso bucco (a veal and tomato based dish)

Dill goes well with fish, especially salmon. Also matches well with cucumbers.

Cumin ... I can't say that I've used it much aside from Indian type dishes like currys. I think it's also used a lot in Mexican food.
