Given my known facts and practice experiences;
"gluton intolerance" (celiac sprue) is rare and identified shortly after birth because, metabolic toxins cause considerable digestive signs and symptoms upon exposures. Thus, chances are, if you haven't considerable digestive history, you don't have it. Management requires dietary gluton elimination (as a warning; it's amazing how marketers have taken advantage of innocents claiming unfounded "gluten intolerance").
Although much more common than gluton intolerance (~60% of humans), Lactose Intolerance is relatively simple to identify because, serial lactose ingestion precipitate indigestion. Management is simple; eliminate lactose and or, take lactase when ingesting lactose.
