I know a lot about SAMe but not as much about anesthesia. I see no reason they wouldn't be safe. SAMe is just a natural substance your body makes anyway, though you are fortifying it in case it is sluggish. It is a methyl donor which in nearly everything I can think of is healthy.
SAMe is usually on the stimulatory side, so if anything it could possibly be that you might require a slightly higher dose of anesthesia. But I really don't think so. If someone were taking high doses or mega doses of B vitamin complexes, which a lot of people do, that is similar to taking SAMe, as those Bs are stepping up the production of SAMe significantly. I'm not sure they would say stop your B vitamins for anesthesia, would they? Maybe, don't know. I don't think so.
Even if you do have to stop it, I usually did not feel ill effects from stopping it for about 2 or 3 days. The ill effects were depressed mood and tiredness. But those did not happen the first day I stopped it. You could probably go a few days without it and be ok, but I don't think you need to stop it at all actually.
Since doctors don't know much about SAMe, if you ask them, they will probably tell you to stop it. If there is a knowledgable doctor, they may say to keep taking it as it will help the healing process along faster and decrease risks of infection or other complications associated with whatever you are having anesthesia for.
